Rabat is calmer and more local than Marrakech or Casablanca. The dining is split between traditional Moroccan tables in the Medina and the Kasbah des Oudaias, and modern restaurants along the Bouregreg river. A good city for unhurried, less touristy meals.
Rabat is a capital city with a quieter food scene than its size suggests. The Medina hides a handful of traditional restaurants serving tagine, couscous Friday, and harira soup without fanfare. Along the Bouregreg river, newer restaurants bring contemporary Moroccan cooking and French influenced menus. The Kasbah des Oudaias neighborhood has rooftop cafes with views across to Sale, good for mint tea and almond pastries. Rabat does not have a single signature dish the way Fes has rfissa or Tangier has calentita, but it is a reliable city for home style Moroccan food eaten at a calm pace.
